Raising a glass to our new partnership with St Andrews' own Eden Mill Distillery!
Euan, we heard that you have some fascinating stories to tell. Can you tell us about your family’s connection to whisky and your connection to Eden Mill?
My family has deep roots in St Andrews, going back many generations. The local whisky tradition here dates back to the 1700s. My great-great-grandfather actually worked on the Kincaple farm and in the Seggie distillery which was opened by William Haig in 1810. This distillery was replaced by a paper mill in 1872. Four generations of my family worked at that mill, which is now the site of Eden Mill. It feels incredible to be a part of bringing whisky production back to this historic location, and to be working on the same ground as my ancestors. It's a job you miss when you're away!
Eden Mill has seen incredible growth. The "Guardbridge" whisky was featured in Forbes this year, and you’re building a new distillery and visitor center. What would you say is the key to Eden Mill's success in such a competitive market?
I believe Eden Mill's success lies in its ability to tell a story. Our whiskies and gins evoke memories and stories of St Andrews. They transport you back to this special place. For example, our Golf Gin is inspired by botanicals found right here around St Andrews.
Sustainability seems to be a core value for Eden Mill, especially with the partnership with the University of St Andrews. Can you elaborate on some of the specific sustainable initiatives that are being implemented at the new distillery?
Sustainability is absolutely crucial for any new distillery. Our partnership with the University of St Andrews gives us a real advantage in this area. We designed our new distillery to be as future-proof and environmentally friendly as possible, with the goal of being net-zero by 2035. This commitment to sustainability influences everything we do, from sourcing raw materials and packaging, to the production process itself. We prioritize renewable energy, with a portion of our power coming from the solar farm on-site. We're also capturing the CO2 produced during fermentation and using it on-site, thanks to our collaboration with the University. Lastly, we are the first distillery to work with the biotech firm, MiAlgae, which will use our wastewater from distillation to produce sustainable Omega-3.
For our NYC Alumni and parents of alumni who are eager to visit the new distillery and visitor center, what can they expect from the experience?
Our new distillery and visitor centre will open its doors in Spring 2025! Our staff are storytellers, sharing the history of the site, the area, and the Eden Mill brand. We also have a private cask program, where visitors can join us on a whisky-making journey, own their own cask of whisky, and even have their own private bottling. It's a unique opportunity to be a part of St Andrews' whisky history.
